In the spirit of Chanukah the festival of lights & greasy foods, I had decided to try out a healthier take of the deep fried potato latke. This recipe is Gluten free (if you use spelt or other gluten free flour), High in fibre & low sugar.
First I wanted it to include sweet potato and then decided to add in some chili peppers. One thing led to another and this recipe came together...

1 medium potato grated
1 onion grated
3 Tsp flour (I used spelt)
2 Tsp diced green chili (1 used 1 Tsp green and another red)
1/2 Tsp sea salt
1/2 tsp cracked black pepper
oil for frying pan (I used coconut)
