I'm officially obsessed with these whole wheat biscotti's. As a mom i find it hard to make a gourmet frittata in the morning. I'm half asleep, no patience and need food in my system.
These biscotti's are stored in my freezer which makes for a quick and easy breakfast. They are quiet filling, leaving me full and energised till lunch. Oh, and they are delicious!

2 cups whole wheat flour
2/3 cup sugar
1/2 teaspoon fine sea salt
2 tablespoons olive oil
1 large egg plus 1 egg white lightly beaten
1 teaspoon pure vanilla extract
1 teaspoon orange zest
1/4 cup orange juice (from a medium orange)
1/2 cup of dark chocolate
1/2 cup of almonds (or nut of choice)
Add in all the dry ingredients into your mixer. (Remember: whole wheat will toughen so do not over mix). Then add in all the wet ingredients. Fold the chocolate and almonds into the dough. Place the dough onto the tray into a log at about 14 by 4 inches wide.
Bake for 30 minutes. Remove from oven and allow the dough to sit for 5 minutes. Slice the dough into 1/2 inch slices, flip it to one side and place it back into the oven for 10 minutes. Once again, flip the dough to the other side and cook it for another 10 minutes.
(Once the 10 minutes are up I like the biscotti's to sit in the turned off oven for a bit longer, just to get a crunchier texture)
