Just remember when you prepare your meals, you want it to be something you look forward to eat, not a chore or something you feel like you have to eat because it's healthy. Well... I don't know if you noticed yet but i'm a huge foodie! I honestly look forward to my meals and always try to prepare them in advance. I believe its important to eat your 3 big meals and 2 snacks in between. It will keep you well energized and helps keep your meals proportionally correct.
This recipe isn't necessarily only good for a snack. It makes for a delicious filling breakfast together with your coffee. Or gives you that sweet ending to your meals. It's a quick and easy recipe that requires no baking and you can keep it stored in your fridge for a good weeks worth of chocolate.
1 cup of peanut butter
1/2 cup of honey
1/2 cup of coconut oil
2 cups of rolled oats
1 cup of shredded coconut
1 1/4 cup of chocolate chips
optional: for more nutrition add in chia seeds, flax seeds and nuts of choice
On the stove (medium heat) melt the peanut butter with the oil and honey. Stir it until its nicely mixed and then take it off the fire. In another bowl add in the oats, coconut and chocolate chips. pour in the peanut butter mixture and mix until the chocolate has melted and all the ingredients are well combined. Place the mixed ingredients onto a tray the size of tray depends on how thick you like your bars. Or I like to roll them into balls for an easier on the go option. Store Your tray into your fridge until it hardens (usually about 1-2 hours) then slice them and store them back in the fridge.
