This salad is packed with nutrients. Bok Choy alone is a fibre filled veggie that contains only 9 calories per cup. Throw in roasted almonds and seeds and you have a nutritious packed salad.
The dressing is large enough for 3 bunches of bok choy (that have 3 bundles per bunch). Which would make for a pretty large family sized salad. The equal ratio of condiments makes it easy to play around how big of a salad you actually want.
First cut the whole bok choy into thin strips. Thats it! Done! Now for the fun part:
1 cup of olive oil
1 cup of vinegar
1 cup of brown sugar
3 garlic cloves
1 table spoon of soy sauce
1 large table spoon of peanut butter (I personally love peanut butter and add in an extra table spoon)
Make sure to mix the dressing well (I use a food processor) just to get a smooth texture.
After you add in the dressing, sprinkle on some craisins, sunflower seeds, pumpkin seeds and if you don't mind the trouble roast some almonds and sprinkle those on as well.
Like I said before, this salad is high in fibre, healthy fats (which burn fat) and a whole lot of nutrients!
